음식물 매개성 감염병, Foodborn diseases

 

  • 음식물 매개성 감염병을 음식물 매개성 질환식품 매개성 질환 또는 식중독이라고도 한다.
  • 미 CDC에 의하면연 4천 8백만 건의 음식물 매개성 감염병이 발생하고 12만 8천 명이 입원치료를 받고 연 3천명이 죽었다고 한다.
  • 그 중 영유아들이나 노령자들 그리고 면역손상이 있는 사람들이 음식물 매개성 감염병에 더 잘 걸릴 수 있다.
  • 음식물 매개성 감염병을 가장 흔히 일으키는 병원균은 노로바이러스이다그러나 다음과 같은 여러 세균이나 기생충으로 인한 음식물 매개성 감염병이 생길 수 있다.
  • 살모넬라 균종노로바이러스와 그 외 사람 캘리시 바이러스클로스트륨(C.perfringens)포도상구균 식중독시겔라배실러스 세류스균브루셀라균소결핵균리스테리아 균비 또는 비 연구균, C cayetanensis보튜리누스균, Criptosporidium북미 원포자충대장균(STEC 0157, H 7), 비브로균에르시니아균캄필로박터균트리키넬라 기생충, A형 간염바이러스람불편모충, Cronobacter (Enterobacter sakazakii) 균 등 세균이나 기생충 감염으로 인해서 음식물 매개성 감염병(음식물 중독)이 생길 수 있다.
  • 아이스크림조개굴류샐러드딸기각종 빵 종류 등 오염됨 음식물 등을 통해서 장구균성 감염으로 인한 음식물 식중독에 걸릴 수 있다.
  • 다음은 각 음식물에 따라 생기는 음식물 매개성 감염병에 관해 설명한다.

음식물 매개성 감염병이 생길 수 있는 음식물의 종류

음식물 매개성 감염병에 관련된 세균

비 저온살균 우유양유염소유

  • 비 저온살균 우유양유산양유를 먹고 음식물 매개성 감염병(음식물 식중독)에 걸릴 수 있다.
  • 특히 영유아노령자면역손상이 있는 사람들이 쉽게 우유관련 음식물 식중독에 걸릴 수 있다.
  • 리스테리아대장균(STEC 0157, H 7), 에르시니아캄필로박터소결핵균 등이 오염된 우유 등을 먹고 음식물 식중독에 걸릴 수 있다.

달걀

  • 살모넬라균이 오염된 생 달걀 요리하지 않은 달걀을 먹고 살모넬라균 달걀식중독에 걸릴 수 있다.

생고기나 요리하지 않은 고기

  • 특히 영유아들이 생고기나잘 익히지 않은 고기 등을 먹고 식중독에 더 쉽게 걸릴 수 있다살모넬라 균종대장균배실러스 세류스균브루셀라균리스테리아 균에르시니아균캄필로박터균 등으로 인해서 고기 음식물 식중독이 생길 수 있다.
  • 특히 생고기를 요리할 때 썼던 칼판이나 그릇을 소독하지 않은 상태에서 채소나 과일류를 요리해서는 안 된다.

저온살균처리하지 않은 쥬스

  • 특히 소아들이 저온살균처리하지 않은 쥬스를 먹고 대장균이나 살모넬라균 음식물 식중독에 걸릴 수 있다.

씨드 스프라우트(Seed Sprouts)

  • 특히 소아들노령자들면역 손상이 있는 사람들이 대장균이나 살모넬라균에 오염된 음식물을 먹고 씨드 스프라우트 음식물식중독에 걸릴 수 있다.

생 과일채소견과류

  • 살모넬라 균종노로바이러스시겔라균배실러스 세류스균리스테리아 균북미 원포자충대장균(STEC 0157, H 7), 캄필로박터균트리키넬라충, A형 간염바이러스람불편모충 등의 세균에 오염된 생 과일채소견과류 음식물을 먹고 음식물 식중독에 걸릴 수 있다.

생 패류와 생선

  • 노로바이러스비부리오균종, A형 간염 바이러스기생충 등이 오염된 패류조개굴 등을 먹고 생 패류 생선 음식물 식중독에 걸릴 수 있다.

  • 1세 이하 영아들이 보튜리누스균 포자에 오염된 꿀을 먹고 꿀보튜리누스균 음식물 식중독에 걸릴 수 있다.

영아 분유 포물러

  • Cronobacter(Enterobacter sakazakii)균이나 살모넬라균이 오염된 영아 분유 포물라를 먹고 음식물 식중독에 걸릴 수 있다.

  음식물 매개 감염병 예방

  • 고기조미료달걀씨드 스프라우트에 오염된 세균을 제거하기 위해 음식물 방사선 조사 처리를 하기도 한다.
  • 손을 깨끗이 씻고 음식물 만드는 칼판 등을 깨끗이 씻고
  • 음식물을 냉장고에 적절히 보관해 세균 번식을 막고
  • 적절한 온도로 익혀서 가능한 한 음식물 매개 감염병을 예방한다.

Foodborne diseases

• Foodborne illness is also called foodborne illness, foodborne illness or food poisoning.

• According to the US CDC, there are 48 million foodborne infections each year, 128,000 hospitalizations, and 3,000 deaths annually.

• Among them, young children, the elderly, and people with compromised immune systems are more susceptible to foodborne illness.

• The most common pathogen causing foodborne illness is norovirus. However, foodborne infectious diseases caused by various bacteria or parasites such as the following may occur. • Salmonella spp., norovirus and other human caliciviruses, C. perfringens, Staphylococcus food poisoning, Shigella, Bacillus cereus, Brucella, Mycobacterium bolus, Listeria, Non-A or Non-B Research bacteria, C cayetanensis, botulinum, Criptosporidium, North American protoplasma, Escherichia coli (STEC 0157, H 7), vibro, arsinia, campylobacter, trichinella parasite, hepatitis A virus Foodborne infectious diseases (food poisoning) can occur due to bacterial or parasitic infections such as , Trichomonas, Cronobacter (Enterobacter sakazakii).

• You can get food poisoning due to enterococcal infection through contaminated food such as ice cream, clams, oysters, salads, strawberries, and various types of bread.

• The following describes foodborne infectious diseases caused by each food.

비 저온살균 우유양유염소유

Non-pasteurized milk, sheep’s milk, goat’s milk

  • You can get foodborne illness (food poisoning) by eating unpasteurized milk, sheep’s milk, or goat’s milk. In particular, infants, the elderly, and people with immune compromise can easily get milk-related food poisoning. You can get food poisoning by eating milk contaminated with Listeria, Escherichia coli (STEC 0157, H 7), Ercinia, Campylobacter, and tuberculosis bovine.

달걀 Eggs

  • Salmonella-contaminated raw eggs You can get salmonella egg food poisoning by eating uncooked eggs.

생고기나 요리하지 않은 고기

Raw or uncooked meat

  • In particular, young children are more susceptible to food poisoning by eating raw or undercooked meat. Salmonella, Escherichia coli, Bacillus cereus, Brucella, Listeria, Ercinia, Campylobacter, etc. can cause food poisoning of meat foods. In particular, do not cook vegetables or fruits without sterilizing the knives or bowls used for cooking raw meat.

Prevention of foodborne infectious diseases • Foods are sometimes irradiated to kill germs contaminated with meat, seasonings, eggs, and seed sprout. • Wash your hands thoroughly and clean cutlery, etc. • Properly store food in the refrigerator to prevent bacterial growth and • Cook at an appropriate temperature to prevent foodborne illness as much as possible.
